Kukicha is made up of stems and twigs that are pulled from the Sencha finishing process. In this case, the stems and twigs are treated similarly to the leaves and produce a mildly flavored green tea that has a satisfying natural sweetness. 

This same tea, when roasted, is known as Houjicha and produces a sweet cup with a nutty accompaniment.
