About the tea...

Tie Guan Yin, also known as Iron Goddess of Mercy and Tie Kwan Yin, has a rich Chinese folklore (as many do!). Whatever the true story behind Tie Guan Yin's origins, Taiwanese growers have embraced the beauty and flavors of this particular tea with perfection.  

This particular tea has been roasted by the gardens Tea Master. This medium roasting provides a caramel/coffee/brown sugar note that finishes, like many roasted oolongs, with a stone fruit (peach, apricot) finish. Liquor color will be an amber tone with a nutty aroma.     

This tea is ideal for 3+ infusions.  Steep at 195-200 to enhance the milky notes.  Steep at 200-210 for more floral notes.  The steeping time and temperatures below are simply a starting point for brewing and we recommend that you adjust those specs to suit your palate!  

About the Growers...

This tea has been harvested from the YiPingChun tea garden in Nantou, Taiwan (1500m above sea level). The Tea Master for this garden is Zhi Xing Chen.  YiPingChun is approximately 35 hectares and began producing top quality Taiwanese oolongs in 2010.
